Bagels are mixed with a wild yeast sourdough starter, slow-fermented for 24 hours, and then boiled and baked, yielding a superior flavor, chew, and crust. We use only local, organic, freshly milled flour. Bagels are baked on Tuesday mornings for maximum freshness. Plain bagels are not seeded on any side; they're plain.
