Bagels are mixed with a wild yeast sourdough starter, slow-fermented for 24 hours, and then boiled and baked, yielding a superior flavor, chew, and crust. We use only local, organic, freshly milled flour. Bagels are baked on Tuesday mornings for maximum freshness. Toasted Pepitas and Smoked Salt are seeded on both sides, so you can enjoy both halves of your bagel equally.
