The Shaw family (1st generation maple farmers) started producing our own pure maple syrup right here in the Mohawk Valley (Clinton, NY) in 2007. During the early months of March and April, we collect the sap daily and boil over a wood-fired evaporator creating the caramelization and flavor as the correct density (67.9% Brix) is reached. Our pure maple syrup is a Grade A, 100% pure, Kosher product. Each batch is checked for the correct density, color, taste and documented. A sample is kept and the finished syrup is then hot packed into 40 gallon stainless steel drums for optimum storage until we redistribute it into smaller jugs or use it in our many maple confections!
We have a licensed and inspected 20-C kitchen at our sugarhouse where all of our products are made in small batches for quality and freshness.
You can find us at several local farmer's markets and festivals during the summer months and our retail store is open all year @ 7945 Maxwell Rd. Clinton, NY.
