Fresh Oyster Medley

This Medley can change weekly based on what's available and what is growing. Possible varieties include Blue Oyster, Golden Oyster, and/or Phoenix Oyster. Blue Oyster is peppery and smoky. It's a dense oyster mushroom. Not as meaty as Shiitake but it won't cook away either. Use the whole mushroom. Our Golden Oyster is very aromatic and beautiful, with a nutty almond flavor and delicate texture. The Phoenix Oyster is silky, nutty and sweet. The only prep may be a bit of sawdust that needs to be trimmed from the bottom. All of our mushrooms are compost free and consequently require very little cleaning.
