Chicken bones and THE secret ingredient to the best chicken soup ever--1 chicken foot! Bring bones to the boil, then gently simmer for several hours in a large stockpot, lid on but askew. Check liquid level often to ensure you do not accidentally boil off all the water. Add your favorite aromatics as you like--onion, celery, bay leaf, garlic, thyme, oregano, sage...you do YOU! Salt as needed, to taste. After stock has reached desired flavor and consistency, strain out bones (and yes, the foot) and discard. Enjoy!
